Baked Mayo-Dijonaisse Salmon Fillet
I don't know if this law is true or an "urban legend" but I have heard it many times. It either comes from Maine or Nova Scotia.
The law states "that it is illegal to serve salmon more than four times a week to the help". But if your tired of eating broiled or baked salmon fillet for your dinner; here is a simple recipe that might help. The ingredients are Dijon mustard, mayonnaise, and Panko bread crumbs. Blend equal amounts of the ingredients and slather over the salmon fillet. Bake at 350 degrees from 8-10 minutes.
Simple and it tastes great. If you don't like it tell your spouse that they can be arrested for cruelty. I hated salmon when I was a child especially in June to July when it was cheap. Salmon Pea Wiggly, another salmon dish was probably created during the summer doldrums in Maine by a harried housewife with too many kids.
