Maine Lobster Egg Rolls Recipe
Maine Lobster meat egg rolls are easy to make. And they are an excellent way of getting your family to pick over all the left over lobster bodies making sure to pick them clean. All the legs have a string piece of meat inside as do the fins. In jumbo Maine lobsters even the feelers (antenna) have meat in them. Also pick out the roe, the tamale and the white stuff inside the body. chop all of this together. Don't be hesitant about the tamale, it has a very good lobster taste as does the white stuff. Do not use the feathery gills, they are bitter.

Fresh egg roll wrappers
shredded cabbage
carrots cut to look like tooth picks
Nori (Japanese seaweed sheets)
Fresh chopped Maine lobster meat

place a sheet of egg rolls on a smooth wood board
dip you hand in water and spread a thin layer of water on the wrapper
place the nori sheet on top of the egg roll sheet
repeat the wetting process with the nori.
Now to make the egg rolls taste really good align the ingredients
    the carrots and cabbage in the same direction
    in  parallel  along the long edge of the wrapper
    add the chopped fresh Maine lobster meat
Roll the wrapper until the ingredients are covered
wet the remaining egg roll edges
fold the ends of the wrapper using water as glue just like a roll of pennies
let sit for an hour in refrigerator
deep fry in a wok at 350  degrees using enough oil so that the roll is covered
fry till golden
eat with Chinese dipping sauces: duck, soy or hot mustard
you can also use Gulf Sauce

Variation: You can just use the nori sheets and not deep fry the rolls.
