This is an elegant dish if you want to serve Maine lobster for a fine dinner party without all the mess associated with eating and cracking claws. No bibs are required. All you have to do is prepare boiled Maine lobster and shuck each one the best that you can. Remember, a 2.23 Lb Maine lobster has meat in the legs, the cavity and the tail fins. Size of the Maine lobster depends if it is the main course; use 2.25 Lb lobsters. As an appetizer use 1.25 Lb. The whole dish depends on the serving dish or glass. Out here they use sundae glasses or shrimp cocktail servers. You can put the tamale on the bottom with a little melted butter and then arrange the meat in an elegant way so that the claws are pointing out (don't remove the cartilage from the claws to keep them in form unless the claws are too large). To serve you can either drizzle melted butter on the lobster or serve melted butter in a side dish. This is a great way to eat and enjoy Maine lobster if everyone is all dressed up. It also provides the server with a choice of sauces to accompany the dish like a little Newburg sauce on top.
