Broiled Maine Lobster
Broiled Maine lobster is probably one of the easiest lobster dishes to make. Take any size lobster and split it in half head to tail; removing the head sack and intestinal canal. You have the option of butter flying the lobster partially open 7/8 or splitting completely in half to produce more servings if the Maine lobster are 2 Lbs and up. I recommend splitting the large Maine lobsters and butter flying below 1&3/4 Lbs. Now you can run these through a preheated broiler with drizzling olive oil on the cavity and the tail or you can dress them up a little by adding diced red pepper and finely diced sweet onion or shallots with a little Panko or bread crumbs, then drizzling again with olive oil. This version keeps the olive oil on the tail to prevent it from drying out. Don't let the legs burn just the edges a little charred. You can also do this outside on a gas grill if you put a pan or aluminum foil under the lobster to prevent the flame from burning the shells, close the grill cover. You can use a Weber type charcoal grill with the cover. Cooking times are for butterfly small 8-10 minutes. For half cut large lobsters 12-13 minutes. Just keep peeking until the crumbs brown or the charring starts. Very tasty. Serve with melted butter and hot sauce.
