POLICY INFORMATION: We guarantee our lobsters to be in prime condition
upon delivery and that your entire order will cook up fine. This is the
big difference with hard shelled lobsters. We will credit any loss
experienced by our customers. We do request that the lobsters are
inspected upon arrival if there is any damage to the outside carton and
that the damage is shown immediately to the delivery agent. If the
carton is in perfect sealed condition, keep closed until you can
refrigerate. Make sure the lobsters are cold ( 50-55 Degrees) and immediately
refrigerate upon opening and close the carton. No claims allowed unless made the same day as
delivery. A representative of the airlines or Federal Express will
examine the shipment through a claim process. Our office will request
pick up of damaged items by Federal Express for payment of any credits
even if said items are perishable and unusable. Do not dispose of any
claimed items until notified by our office if a credit is requested.
Very rarely does anything go wrong, everything will go right with your
order , so don't worry. We carefully pack with enough insulation and
gel packs to survive trips to Tokyo, Japan; 72 hours and they arrive
alive. We put in extra gels for hot arrival areas like Tucson, Phoenix
or Palm Desert during the summer.
LOBSTER CARE: You need to refrigerate the lobsters as soon as possible. If
you have room in a large refrigerator, you can store the lobsters in
the carton (recommended method). You can remove the lobsters to a
holding container and refrigerate. An insulated cooler can be used with
ice on the bottom covered with a cloth or cardboard to separate the
lobster from the ice. Lobsters do not tolerate fresh water and will
perish if held in an ice bath. They like 35-40 degrees F., high
humidity and darkness. It is recommended that if you plan on using the
lobsters at a later date to cook them completely then store under
refrigeration. Dip them in boiling water until heated (about 2 minutes)
before serving to reheat. Partial par boiling is not recommended; cook
the appropriate amount of time (how to boil lobster - see recipes). We do not cook or par
boil lobsters for customers for shipping. Federal health officials have advised against the practice.
